Soak the sheet of gelatin in cold water. Heat gently the white chocolate. Boil the cream with the lemon zests.
Pour carefully the cream over the white chocolate by realizing an emulsion.
Add the lemon juice, tequila (facultative) and sheet of gelatin. Mix and pour into cocktail glasses.
Place in the freezer.

Margarita Cocktail
Heat gently the Vanilla Crème Brûlée until it begins to boil. Add the Grand Marnier® (facultative). Pour
carefully into glasses and leave to stand for 30 minutes at room temperature.
Place in the refrigerator for at least 2 hours.

Before serving, add the brown sugar and caramelize.
