Arrange the eggplant slices on 4 slices of bread. Spread the cream. Arrange the cucumber slices, cherry tomatoes.
Sprinkle with grilled pine nuts and chopped mint. Place the other slice of bread on each composition.
You can sprinkle a little spice before closing the sandwich.
