Place the red fruits in a saucepan and bring to low heat to thaw.
Add 20g of sugar and caramelize for about 20 minutes.
Place the fluid cream in a bowl. Add the sugar and whisk lightly.
Put 1 tablespoon of jam at the bottom of each glass. Add the whipped cream and pour some of the red fruit compotes over the top.
Garnish with a mint leaf.
