Cut the cold butter into cubes and put it in the flour. Mix.
Knead the dough with the palm of the hand to make it homogeneous. Flatten the dough and refrigerate at least 2 hours before use.
Roll out the dough with a roller. Line the dough into the mould. Prick the pie crust with a fork.
Bake in a ventilated oven for about 20 minutes at 170°C (390°F).
Brush with beaten egg and return to the oven for 2-3 minutes.
Put the different cheeses in the pie shell. Mix eggs and cream in a bowl. Season (salt / pepper / parsley). Pour into pie crust.
